FLAVOR INNOVATION, AUTHENTICITY CRUCIAL FOR FOOD DEVELOPMENT
Authentic regional global flavors, a willingness to try foods perceived as adventurous, and demand for healthier items with indulgent taste profiles are all trending with US consumers, according to market research firm Innova Market Insights. Mimi Bonnett, senior director at Innova Market Insights, said there’s nothing new about global cuisine exploration, but, “We’ve noticed a general pattern of cuisine exploration that’s happening. People think about (cuisines) like Chinese or Italian, and then it becomes regionalized. And then it becomes about the ingredients. And then it becomes about maybe subcultures within the ingredients.
